Asian Pear Miso Caramel
A Field Trip
One lovely early morning in September, Geoff, our long-serving production manager, and I made a little trip to Hendersonville to pick Asian Pears. The owners of Pilot Mountain Pears kindly welcomed us and helped us get started.
The Flavor
With the Asian pears Geoff and I picked Ashley made a pear butter, but instead of using the traditional spices you find in something like apple butter she chose 5 spice (star anise, cinnamon, Szechuan pepper, fennel, and clove). Additionally, Ashley created a miso caramel sauce using locally-made Miso Master white miso. Her reaction to the combination of all these ingredients was of pure enthusiasm. She's been making ice cream for 20 years and when she is excited about a flavor you know it must be good :)
