Pop Bubble Tea Now Open

Pop Bubble Tea is now open Wednesday through Monday 12-8pm inside The Hop Ice Cream at 640 Merrimon Ave!

The new venture is the collaboration of two long-time friends and co-workers, Eva Peterson and Ashley Garrison, who have combined their considerable food service and small business knowledge with a passion to create and drive to help others. The effort aspires to provide a bubble tea experience for the whole Asheville community, delivering traditional and fun, high quality drinks that perfectly compliment the ice cream shop with which it shares the space.

About Pop Bubble Tea

At its core, Pop Bubble Tea is about collaboration. It is the union of Asian and Western cultures and ideas. The culinary team of Eva Peterson and Ashley Garrison have created a business drawing on expertise from extensive professional Taiwanese bubble tea training and years of crafting fresh, locally-influenced products. It will feature high quality tea leaves direct from Taiwan as well as some local ingredients. It will respect the culture of bubble tea yet welcome fun, seasonal specials. It will allow patrons to customize their experience by choosing tea and milk types (including non-dairy), toppings, sugar and ice levels, etc. And the hope is Pop Bubble Tea will offer this while making a positive contribution to the community.

To create the Pop Bubble Tea menu Eva and Ashey combined their professional Taiwanese training with experiences from testing hundreds of recipes (not to mention visiting a hundred bubble tea stores in the US and Asia between them). This leads to a menu that balances traditional bubble tea offerings with some truly special drinks and toppings. There are classic milk and fruit teas using freshly-brewed, high-quality loose leaf teas from Taiwan (Assam Black, Jasmine Green, and Oolong). In addition to serving the traditional, Eva and Ashley add their own character to the menu with Poppy’s Special-teas (named for the mascot, Poppy, a playful bubble-tea-drinking otter) and the “Matcha Latte Series”, made with pure matcha and paired with brown sugar, strawberry, or mango flavors. The toppings range from traditional tapioca, brown sugar tapioca and popping with real fruit juice to other toppings such as grass jelly, aiyu jelly, egg pudding, red beans, sea salt cheese cap to enhance the drinks. All of these are common toppings found in traditional stores in Taiwan.
